Ingredients
For the Salad

(1 kg) Yukon Gold or Red Potatoes

hard-boiled eggs, chopped

cup celery, finely chopped

cup red onion, finely chopped
For the Dressing

cup mayonnaise

Dijon mustard

apple cider vinegar

Instructions
Boil the Potatoes
Wash and peel the potatoes if desired. Cut them into evenly sized chunks.
Place the potatoes in a large pot and cover with water. Add a pinch of salt.
Bring to a boil, then reduce heat and simmer for 10–12 minutes or until fork-tender. Drain and let cool.
Prepare the Dressing
In a mixing bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper. Adjust seasoning to taste.
Combine the Ingredients
In a large bowl, combine the cooled potatoes, chopped eggs, celery, and red onion.
Pour the dressing over the potato mixture and gently toss to coat evenly.
Chill and Serve
Cover and refrigerate for at least 1 hour to allow flavors to meld.
Before serving, garnish with fresh dill or parsley if desired.
