Ingredients
  

For the Salad

  • 2 lbs (1 kg) Yukon Gold or Red Potatoes
  • 3 hard-boiled eggs, chopped
  • ½ cup celery, finely chopped
  • ¼ cup red onion, finely chopped

For the Dressing

  • ¾ cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • 1 tbsp fresh dill or parsley (optional)

Instructions
 

Boil the Potatoes

  • Wash and peel the potatoes if desired. Cut them into evenly sized chunks.
  • Place the potatoes in a large pot and cover with water. Add a pinch of salt.
  • Bring to a boil, then reduce heat and simmer for 10–12 minutes or until fork-tender. Drain and let cool.

Prepare the Dressing

  • In a mixing bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper. Adjust seasoning to taste.

Combine the Ingredients

  • In a large bowl, combine the cooled potatoes, chopped eggs, celery, and red onion.
  • Pour the dressing over the potato mixture and gently toss to coat evenly.

Chill and Serve

  • Cover and refrigerate for at least 1 hour to allow flavors to meld.
  • Before serving, garnish with fresh dill or parsley if desired.
